makes 6 servings
• 12 cups plain popcorn (a little over half a cup of kernels)
• 2 tbsp cannabutter
• 1/4 cup butter (for extra strength use a 1/4 cup and 2 tbsp cannabutter)
• 1 cup dark brown sugar
• 1/4 cup honey
• 2 tsp salt (divided)
• 3/4 tsp baking soda
• 1 tsp vanilla extract
• preheat oven to 225 F
• pop popcorn and set aside
• line 2 large baking sheets with parchment paper, set aside
• in a medium saucepan over medium heat, melt the cannabutter and butter
• stir in brown sugar, honey, and 1/2 tsp of salt- cook and stir until it comes to a boil
• lower heat to a simmer and cook for 1 and a half minutes
• remove from heat, quickly stir in baking soda and vanilla extract (mixture should turn light brown and frothy)
• working QUICKLY before the caramel hardens and cools, pour mixture over popcorn in a large bowl and mix well
• spread caramel-coated popcorn onto the baking sheets (and flatten), sprinkle the remaining salt over the popcorn
• bake for 15 minutes, then flatten the popcorn again and bake for another 15 minutes
• before popcorn fully cools, separate each piece into another large bowl
• enjoy!
